Summer Thyme

Difficulty **

  • 4 cl Cala Kumquat gin
  • 2 cl fresh lemon juice
  • 10 cl pink grapefruit juice
  • 6 cl soda
  • 1 cl thyme syrup (to be prepared in advance)
  • ice cubes

Garnish :

  • 1 sprig of fresh thyme
  • 1 wedge of grapefruit
  • jigger
  • shaker
  • strainer
  • bar spoon
  • short drink glass 25 cl

Preparation of the thyme syrup

  • Prepare your fresh thyme syrup 24h in advance (in order to let it infuse).
  • You need therefore 4 sprigs of fresh organic thyme, 7 cl. cane sugar syrup and 5 cl. boiling water.
  • Let the thyme sprigs infuse 10′ into the syrup and the boiling water.
  • Filter the infusion through the strainer and reserve it.
  • You can reuse a small clean glass bottle to store your thyme syrup in the fridge.

Preparation of the cocktail

  • Fill the shaker 2/3 full with large ice cubes.
  • Pour the gin, the lemon juice, the grapefruit juice and the syrup.
  • Close the shaker and shake it vigorously.
  • Then pour the mixture without ice cubes into a very cold glass an add soda.
  • Gently stir with the bar spoon.
  • Decorate with a sprig of fresh thym and a wedge of grapefruit. Cheers!
